Pantry Curry Meatballs
I know this is no big deal... but I was really craving Indian curry.
I live in a little town in Eastern Washington, USA that is 90% Hispanic. There's not an Indian restaurant within 50 miles... and even when I do get into that town... my wife HATES Indian food.
So if I want it, I have to make it. Looking through the pantry, I found a packet of curry cubes.
SO: one chopped carrot and one chopped onion later, into the pot they go, with only 1/4th of the curry cube... and two tablespoons of apple butter. I had cooked some chicken in a pressure cooker, and I'd saved the liquid... so about 1/2 cup of that schmaltz goes into the pot. For protein, I had some frozen meatballs, so a couple of handfuls go into the pot, and about 2 cups of leftover brown rice.
I just let that simmer for about 10 minutes.
Even my 4 year old grand daughter thought it was good: "Baba, spicy food is GOOD FOOD!"
Fed the whole family... except for the wife, who is eating cold cereal (which is exactly what she ate for two weeks when we went to India a few years ago).
Pantry curry really hit the spot. I'm super happy, pleasantly full, and didn't spend a dime on take-out.
