American living in Mexico, what are my options?

So I'm an American that is currently living in Mexico for at least the next 6 months and am wondering what kind of options do I have. My parents retired down here and I came to visit and loved the place so I've decided to stay a while, but my money flow is becoming an issue. Would it be possible for me to apply to remote work jobs in the US (I still have an address in the US I could use, I'm subleasing my home in Colorado), I've seen many that stipulate you must be located in the US. Could I use a VPN to look like I'm still in Colorado? The majority of my experience is in customer service rolls so lots of the virtual call center type jobs seem up my alley.
