Help adding variety to food when keeping cost low?

Does anyone have good recommendation to keep our grocery bill down in the long term? COVID hit us hard, and we only have about $45 for two adults per week.

The problem is that I have celiacs, and most things I find online are very wheat heavy. I’m feeling increasingly guilty that I get the “good food” and my husband is left with the cheap wheat meals.

Here is what we’ve generally been eating. Rice and beans Fish soup Kale soup Veggie chili Eggs (lots and lots and lots of eggs) Butter noodles Ramen (with eggs) Pork loin with rice Frozen tombstone pizza Mash Potatoes and hot dogs

This food has been great for the last two months, but it’s looking more and more like a long term situation, so I’m getting increasingly worried about nutrition and variation.

Any advise on low cost (but safe!) meat or produce is very appreciated.

And please, no hate. I can’t handle it right now. We’re trying our best. We thought there would be more jobs open, but most places are reducing hours so we can’t find anything that will working with our full time hours.
