How do I ensure I won't get scammed/in any trouble?

I posted to the sub a few days ago regarding a transcription job I needed done. Numerous people have reached out to help me with it, and I'd like to give them the transcriptions and pay them for their services, however I have never gone about doing online work before. How are these transactions supposed to work? Thanks in advance.
